Mice, like dogs, horses, and most other mammals, have two color-sensitive cell types in their eyes. The only mammals with more than two are the primates, including humans, which have three. Birds and reptiles have four color-sensitive cell types. So yes, sort of, mice can see some color, but not as well as we can.
